How to Make Aliñao: A Cuban Party in a Jar

If you’ve ever been to a Cuban family gathering, you know two things are certain: someone’s going to break out the conga line, and someone’s going to pour you a glass of Aliñao. This traditional Cuban drink is like a fruity, spiced treasure in a bottle, passed down through generations to sweeten up every celebration. Whether it’s Christmas, a baby shower, or just another Thursday night, Aliñao is the liquid party starter you didn’t know you needed.

What You’ll Need:
- 4 cups of mixed dried fruits – prunes, raisins, dried apricots, cranberries, currants, dates—it’s a dried fruit fiesta! If theres something here you dont like, you dont have to add it!
- 3 cups of fresh fruits – like pineapples, grapes (green and red), cherries, apples (green and red), figs, papaya, plums – any mix of this will work. the more fruit, the better it will taste (trust me!)
- 1 cinnamon stick (spice is life)
- 4-5 cloves (tiny but mighty)
- 1 vanilla bean (or 1 tsp vanilla extract if you’re not feeling fancy)
- sugar cane – use as many or as little stalks as you want. adjust the sweetness as you see fit. just be sure the sugar cane is chopped or diced as best you can. If you can not find sugar cane where you are, you can use extra white or brown sugar!
- white sugar (to make a simple syrup)
- 750ml of rum or agua ardiente (Cuban rum if you can swing it, or any good quality rum or agua ardiente, this is dealers choice, whichever you prefer. I use agua ardiente) NOTE: to make 5 gallons (how I did recently) we used 6 750ml bottles of alcohol
- Glass jars – you want gallon sized
How to Make It: Step-by-Step
1. Prep: Fruit Frenzy


- wash, dry and cut up all of your fruit and sugar cane. remove the pits from any stone fruits you decide to use!
- Mix all your fresh and dried fruits together in a big pot. This is the fruity foundation of your Aliñao empire.
2. Sugar, Sugar: Make A Simple Syrup
- make a simple syrup using water and white sugar. To make a simple syrup, combine equal parts sugar and water in a saucepan. Heat the mixture over medium heat, stirring until the sugar completely dissolves, add in cloves and cinnamon to infuse the simple syrup for a few minutes.
- Once the mixture is cooled down, add in the fruits and the sugar canes and let it all sit together to infuse for anywhere between 45 minutes to 2 hours (however long you can your family can be patient for! Though I will say, its worth it to wait a couple of hours. Just make some cafecito in the meantime)
- NOTE: we made 2 gallons of simple syrup for a 5 gallon batch of the drink. adjust as needed for the amount you need. if you are only making 1 gallon, a cup or two of simple syrup should be enough, just remember it needs to be enough to fully infuse the fruit!
3. Bring on the Alcohol

- Pour in your alcohol of choice, many Cubans will prefer really good cuban rum but we opted for sugar cane based agua ardiente.
- Stir the whole mix together like you’re conjuring up magic—because, honestly, you kind of are. (we used 6 bottles – 750ml each – for a 5 gallon batch).
4. Jar It Up

- Ladle the fruity, rummy mixture into clean glass jars. Seal them tight and put them in a cool, dark place to marinate. Aliñao needs at least 3 months to reach its full potential (though some die-hard fans wait up to 6 months or more!). The batch we recently made at our house was for the announcement of my pregnancy – so ours will sit for a full 9 months!
- Some fun trivia: you can let it sit even longer. some families will save some of the bottles made for pregnancy announcements to give as gifts to the children when they turn 15, get married or go to college etc.
5. Shake It Up
- Every few weeks, give the jars a gentle shake or stir. Think of it as checking in on your creation while it quietly transforms into something amazing.
- Some fun trivia: some families will bury their jars underground and dig them up when the time is right!
6. Drink Up
- Once your Aliñao is ready (and you’ve waited patiently), it’s time to serve it up! Pour it into small glasses, spoon a little of that boozy fruit on top, and sip slowly. This is a drink to savor.
